a-a–a-akkkk! don’t touch that butcher block it is priceless have you taken leave of your senses…!!!
simply clean it up some with soap and water. butcher block tops were intended to be utilitarian, and a little beat up is good and alot beat up isn’t a bad thing either. the only thing that needs to change in that kitchen is the perception of the viewer.
DO NOT PAINT. Myself, I’d take a sander to the wood, smooth it out and poly the wood. Or with something that would seal the wood. You could do this to all your wood.
Good luck
Don’t paint them if you put food on them, which I assume you do. You would add toxic substances to your food. Butcher block tops that are actually used are supposed to look worn. But you could sand them with a power sander to bring out a smoother surface if they are too worn. To keep the unworn look use a cutting board. Which is kind of like not using a fireplace in order to keep it clean. Myself, I use my butcher block top as a cutting board. It is worn but not to the point where I feel the need to sand it.
I’d suggest buying or renting a random orbit sander with some 120 grit sandpaper and getting to work. Although butcher block is supposed to look worn the bacteria that can build up in unsealed wood in incredible. Personally I’d go with a few coats of satin polyurethane after the sanding. The polyurethan will give you a few tips on application. As tough as poly is, I wouldn’t use my countertop as a cutting board.
