9/12 inches is an average and it depends on what your using for the actual top to determine if supports are needed or not.
I will tell you ( and I know) that it you happen to be using a ceramic tile ( stone, porcelain etc) you must have a support(s) for any thing 9" or more. Other products have there own requirement. Any questions you can e mail me through my avatar and check my qualifications there. GL
Mine is 11 inches. Depending of the weight of your top, any more overhang will require supports.
I would think about a foot. Practice sitting in a space for comfort and then take the measurement from that point of view. We sat at a bar a few weeks ago and it was terribly uncomfortable I actually had a backache when we left the place. It was a waffle house restaurant and the bar stools were fine but because I am a short person there was nothing to put my feet onto. It felt like I had to hang on so I wouldn’t fall or slip off the bar stool. It’s good to find a comfort sitting on a bar stool. I am 67 yrs old and wished I was a bit taller. Please take comfort into consideration for building your bar.
