I don’t want to spoil the backs of my new leather chairs with hair grease, but how can I stop the fabric chair backs from slipping off?

Leather is quite easy to clean, see the link below, so I would just throw out the fabric covers. If you really want them you could attach long tapes and fix them to the feet of the chair at the back.
You need to use a leather protector on your leather and clean regularly rather than trying to cover up the problem. Fabric covers will actually hold grease from the head and will be no better for your leather than without.
A good leather protector will inhibit body oils form damaging the leather finish or being allowed to soak in.
